History:
Created for an easytocarry snack, the first recorded recipe in Horace Kephart's camping guide in California was published in 1910.
Another version dates back to 1968 when two California surfers made an energy mix with peanuts and raisins.
Today, different variations include raisins, apricots, dates, coconut, almonds, papaya, pineapple, Brazil nuts, banana chips, pecan halves, pumpkin seeds, cashews, hazelnuts, walnut halves, and pieces of chocolate-coated candies.

*Ingredients:
- 1 tsp sesame seed oil
- 1/2 cup slivered almonds
- 3 finely chopped dried peaches
- 2 tbsp grated coconut
- 1/2 cup chopped orange rind
- 1/4 cup raisins
- 3 tbsp shortening
- 3 tbsp butter
- 1/4 cup sucralose
- 1/4 cup granulated sugar
- 1-1/2 tbsp molasses
- 1/4 cup honey
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp ground flax seed, softened with 3 tbsp of water
- 1/2 cup diced frozen cherries
- 1 diced golden apple, cooked for 3 minutes in the microwave with 1 tbsp lemon juice
- 1/2 tsp baking soda
- 1/4 tsp kosher salt
- 1 tsp baking powder
- 1/4 cup stone-ground whole wheat flour
- 1/4 cup whole oats
- 3/4 cup all-purpose flour
- 1/2 cup chocolate-coated pieces
- 1 or 2 tbsp of flour (if needed)
- Baking spray or other non-sticking agent
- Garnish: - 1/2 cup chocolate-coated pieces
Steps:
1. In a medium-low heated skillet, add sesame seed oil, chopped almonds, finely chopped dried peaches, grated unsweetened coconut, finely chopped orange rind, and raisins. Stir to combine and heat until fragrant. Set aside to cool.
2. Add butter-flavored shortening, sweet cream butter, sucralose, white granulated sugar, and molasses in a mixing bowl. Stir with a wooden spoon until creamy.
3. Add honey, egg, vanilla extract, and softened flax seeds. Stir to combine and let it stand for 3 minutes.
4. Add and stir the diced cherries and cooked apples with their liquid.
5. Add baking soda, kosher salt, baking powder, whole wheat flour, and oats. Stir in and let stand for 3 minutes to soften oats and activate the leavening.
6. Add the cooled fruits, nuts, and chocolate-coated candies to the batter and fold in.
7. Add some sifted flour until 3/4 cup is combined.
8. Check for consistency by scooping 1 tbsp of cookie dough and placing it onto the baking sheet. Make sure the dough is firm enough. Add 1 tbsp of flour to the cookie batter until a spooned appearance holds on the baking sheet.
9. On a lightly greased or sprayed baking sheet or pan, spoon one tablespoon measure of dough and place 2 inches apart.
10. Bake in the preheated oven at 350 degrees Fahrenheit for 9 - 11 minutes or until the tops of the cookies look soft and puffy and the edges are brown. The cookies will set and hold their shape while cooling in the pan.
11. Place the pan on a rack, ensuring ventilation is underneath the cookie pan on the stand.
*Hints:
- This cookie dough freezes well. To freeze the dough, form it into a long roll and wrap it tightly in a freezer bag. The cookie dough will stay fresh in the freezer for up to two months.
- When ready to bake some cookies, unwrap the frozen dough roll, cut it into desired slices, and bake as usual.
