History:

Waffles have been enjoyed for centuries and have a rich and exciting history. The first known waffles date back to ancient Greece, where cooks would make flat cakes called "obelios" using two metal plates over an open fire. In the Middle Ages, waffles became popular in Europe and utilized irons with intricate designs, often featuring religious symbols. These waffles are typically eaten as a snack or dessert, often with honey or fruit toppings. In the 18th century, waffles became a more common breakfast food, and the first waffle recipe was published in a cookbook in 1749. As waffle irons became more common and affordable, waffles became even more popular. Today, waffles are enjoyed worldwide and in many different variations and flavors. From classic Belgian waffles to savory chicken and waffles, there is a waffle recipe just like ours to suit any taste. So, next time you enjoy a delicious waffle, remember this beloved breakfast food's long and fascinating history.

Tools Required For This Recipe:

Large bowl, medium bowl

Whisk, measuring cups, measuring spoons

Rubber spatula for mixing

Sifter or sieve

Ladle

Lard or shortening to lightly oil the iron

Waffle iron

Potholders or oven mitts

Ingredients for this recipe:

2 cups sifted allpurpose flour

-¼ cup white granulated sugar

-Four teaspoons of baking powder

-¾ teaspoon of Kosher salt

-Three medium eggs

-1 7/8 cup of almond milk

-Three tablespoons of extra light olive oil

-½ teaspoon almond extract

Garnishes: Fresh fruit, honey butter, maple syrup, or warmed-up fruit preserves.

Instructions For This Recipe:

1. Whisk the flour, sugar, baking powder, and salt into a large mixing bowl and set aside.

2. Whisk the eggs and add milk, oil, and extract separately.

3. Make a well in the flour mixture and pour the wet ingredients into the dry; whisk gently until the batter is smooth.

4. Heat your waffle iron and brush on a small amount of shortening or lard. Oil and butter will make the batter stick to the iron.

5. Pour the batter onto the center of the waffle iron; no need to spread; once the lid comes down, it will do it for you.

6. Cook until light golden brown ( the steam will lessen when they are ready. Once they are baked, gently lift the lid.

7. To make the waffles crispy, close the lid for extra crispiness about a minute longer. This will give them a nice crunch on the outside while still being soft and fluffy.

8. To keep your waffles warm and crispy, place them in a preheated 200°F oven while you cook the rest of the batter.

9. Serve your waffles with your favorite toppings or our garnish suggestions in the recipe's ingredients above.
