★Ingredients:

Butter, salted -2 tablespoon

Onions, yellow -1/2 cup

Black pepper -1/4 teaspoon

Cinnamon -1/4 teaspoon

Ginger -1/4 teaspoon

Water -2 cups plus a little more for stirring

Chicken thigh 2 large, cut up into bitesize pieces

Asparagus - a bunch of spear tops cut up (save bottom pieces for other soups or sauces)

Bay leaf -1 or -2

Medium salsa -1/2 cup

Tomato sauce -1/2 cup

Garlic -2 teaspoons prepared

Chicken broth -1 - 2 cups

Potato starch -2-3 tablespoons plus a little water to make a slurry (thickener)

Honey -1 tablespoon

Rum extract -1/4 teaspoon

Parmesan, garnish


★Directions:

★1 Add butter and onions to a medium-high skillet and stir for 1 - 2 minutes.

★2 Add spices: pepper, cinnamon, ginger.

★3 Add a little water to stir the mixture so the spices will not burn.

★4 Add chicken thigh pieces, stir to combine with the spices, 2 cups water, asparagus, and bay leaf, stir, cover, and cook for 6 minutes.

★5 Lift the lid and add salsa, tomato sauce, garlic, and chicken broth. Cover and cook for 6 minutes more.

★6 Remove the top, thicken with potato starch slurry, then add honey and rum extract.

★7 Turn off the heat and let everything combine for 5 minutes.
