Ingredients for Crumb Topping:
1/2 cup coconut
2 tbsp flour
2 tbsp flax seed, ground
2 tbsp butter
¼ cup brown sugar
¼ cup chopped dates
¼ tsp allspice
¼ tsp ginger
½ tsp pumpkin pie spice

Ingredients for Cake:
2 cups all-purpose flour
1/2 cup coconut
½ tsp kosher salt
1 tsp baking powder
¾ tsp baking soda
1/2 cup sucralose
1 tsp cinnamon
¼ cup brown sugar
1 cup greek yogurt
Two large eggs
¼ cup butter, melted
¼ light oil
1 tsp vanilla extract
½ tsp orange extract
1/4 cup + 2 tbsp evaporated milk
1/2 cup apricots, chopped
1/4 cup orange rind, finely chopped

Note: Save 4 slices in the deep freeze, it will be a topping for an "Apple and Apricot Dessert".

Directions: For the crumb topping:
1. In a medium-sized bowl, add and combine coconut, flour, flax seed, ground, butter, brown sugar, dates, allspice, ginger, and pumpkin pie spice, and set aside.

Directions for the cake:
1. In a mixing bowl, add flour, coconut, salt, baking powder, baking soda, cinnamon, sucralose, and brown sugar, and whisk to combine.
2. Make a well in the center of the flour mixture and add yogurt, eggs, melted butter, oil, extracts, and evaporated milk then gently fold in; add apricots and orange rind, and fold in again.
3. With a spatula, scrape the batter into a greased baking dish. Sprinkle the top with the crumb topping.
4. Bake at 350 degrees Fahrenheit for 25 minutes, checking the center of the cake with a toothpick, and if sticky and moist, return the cake to the oven for 3 to 5 minutes more.
5. Take it out of the oven, and cool it on a rack, so air can get between the bottom of the pan and the counter space so it will cool fast and not be wet on the bottom from the steam.
