Ingredients for taco salad filling:
1 tsp. Olive oil
1/3 cup onions, sliced then halved rings
1 tsp or 1 large garlic clove mashed or chopped
Stir together in medium low skillet until the vegetables are just leaving the raw stage.
Add:
2 cups cabbage, shedded
Keep stirring, then add:
2 tsp taco sauce
1 tsp ketchup
¼ cup salsa
1-2 tbsp nutritional yeast
1 tbsp of Taco Seasoning
Stir well while you continue to cook.
Now add ground beef and enough water to cover: ½ – ¾ cup
Put on lid and simmer on low for 10 minutes.
Take off lid and finish cooking until a lot of the liquid has evaporated. Make sure you keep enough of that liquid goodness for the salad.
Toppings we used for salad: (You use what you like, and the amount you like on your salad for your family)
Lettuce – soaked to make it clean and crisp
The meat filling above
Cheese- grated (Colby Jack and Pepper Jack are great choices)
Tortilla Chips – we used Cool Ranch Doritos. Break onto salad for more crunch, or use Taco Shell Bowls
Greek yogurt or sour cream, add extra taco seasons if desired
Dill pickles – slices or diced
Olives – sliced or diced or halved
Onions – raw – half rings, or diced
Extra yogurt or sour cream and olives on top
Drizzle Catalina Dressing around the outer perimeters of your salad bowl. (Thousand Island goes well)
Fancy up with more chips if desired.
